Zucchini Turkey Meatballs

Eating healthy consistently is not that hard when you eat something different all the time, you enjoy what you eat, and you don’t feel deprived.

Easy to say huh?

Much harder to live it!

Well, not so much.  I am working hard to help you so that you can start playing in the kitchen and making some new and different meals for you and your family so that you can start enjoying eating healthy.  That is why I wrote my book Eat To Be Fit.  Because I wanted to show people that it is possible to eat yummy food and still lose weight and get fit.  There are over 300 healthy recipes in there that are delicious and easy to make.

I know how frustrating it can be to figure out what to make for dinner every night…. I’ve been there!  And you just don’t feel like making chicken again.  Well, I love ground turkey and its so versatile and easy to make.  I especially love meatballs.  And there are so many different ways to make them.

One of my favorites is my Spinach Turkey Meatballs.  Such a go-to in my home!  Deelish!  That recipe is on My Pinterest Boards, along with tons of other healthy and fit recipes.  So make sure to check it out and “follow” so that you have tons of healthy recipes organized.

So, I am always looking for ways to sneak veggies into meals so that my hubby and toddler will eat them.  So these Zucchini Turkey Meatballs that I made where a hit.  I served it for them with brown rice pasta and a little organic marinara sauce and they devoured it.

Zucchini Turkey Meatballs

  • 2 lbs lean ground turkey
  • 1/2 cup quinoa flakes
  • 4 garlic cloves, minced
  • 1 zucchini, grated
  • 1/4 cup parsley, chopped
  • 4 tbsp balsamic vinegar
  • 2 tsp oregano
  • S&P to taste
  • 2 egg whites
  • Parmesan cheese to taste (optional)


  1. Preheat the oven to 350 degrees.
  2. Place all the ingredients in a large bowl and mix well.
  3. Form into meatballs and place on a lined baking sheet and bake for 20-25 minutes or until done.
