Veggie & Turkey Scramble
I love to eat chicken, but sometimes I do get a little bored of it.
This is when I call out to my dear friend TURKEY……. And what better than in the form of ground turkey that is so easy and fast to cook. And of course full of protein.
I love that turkey is so versatile to use. You can basically throw in any veggies, any spices, mix it in with the turkey and have a delicious and healthy meal. It is also really good to use in the crockpot.
One of my favorite ground turkey recipes is my Balsamic Veggie Turkey Meatloaf. Its in my Eat To Be Fit Healthy Recipes Book and it is crazy delicious and sooooo healthy! Its got tons of veggies in it. I love making it because its so big that I have tons of left overs for the rest of the week.
Its great for a snack because its got the protein and veggies all in it.

Veggie & Ground Turkey Recipe

Veggie & Turkey Scramble
Ingredients
Ingredients
- 2 lbs lean ground turkey
- 1 1/2 tbsp chili powder
- 2 tbsp grill seasoning
- 1/2 onion, diced
- 3 garlic cloves, diced
- 1/2 red pepper, diced
- 2 zucchini or yellow squash, diced
- 1 can diced tomatoes with their juice
- 2 tbsp tomato paste
Instructions
- In a large skillet with a little stock, cook the onions, peppers, and garlic.
- Add in the turkey and brown.
- Add in a little more stock and the zucchini and chili powder.
- Cook for a few minutes and then add the tomato paste and tomatoes.
- Cook for a few minutes or until the turkey and zucchini are cooked and everything is well incorporated.

It really is nice to switch it up once in a while and eat something different.
I added a little wholly guacamole to the top of the turkey and served it with jasmine rice for the boys and they devoured it. I also had this for lunch the following day over a salad and it was really good. And I still had left overs so I served this up over the weekend for my hubby with some brown rice pasta. It was like a Healthy version of Pasta Bolognese. YUMMMMM
