If you are like most people, you don’t.

I used to not love eating vegetables even though my mom did a great job and making sure we always tried different veggies and always served us some to get us used to eating them.

I know that its so much easier to just whip up some chicken and throw on your plate some brown rice and call it a day.

But if you do that, you are missing out on burning a ton of calories.

Yep, you read it right.

Eating veggies helps you burn more calories.

The process of digestion for veggies is really hard so you burn a lot of calories just in the process of digestion.

It also helps you feel fuller.

But its such a pain to cook them right?

It’s so much easier to just throw some lettuce on your plate and have a salad.

But is that as healthy?  Does a salad help you burn as many calories?

If the salad is made of romaine and iceberg lettuce with just a few peppers and onions. Well that isn’t as nutritious and you won’t burn as many calories in the process of digestion.  It also doesn’t fill you up as much.

I like eating vegetables instead of a salad.  Only because lettuce doesn’t fill me up so I end up eating poorly after because Im still hungry.

But plain veggies don’t taste that great and aren’t as enjoyable.

So I always try to find ways to make them so that they taste yummy and I can be consistent eating them so I can take advantage of the calorie burn from eating them.

Easy Way To Get Veggies In Daily With Minimal Work

Cooking vegetable every day is a pain and takes too much time and its tedious.

So what I do is cook a ton of them at the beginning of the week and then I can enjoy them all week.

This Roasted Vegetable Recipe is one that I literally can eat every single day.

The first time I made this recipe, I literally sat on top of the platter with a fork and pretty much ate half the dish.  I know, not good, but thats how tasty they were.

I have made them every week since I created this yummy vegetable recipe.

So instead of having to cook vegetables every day which means, sauté, grill or bake every single day.  Just do it once and then you can have them all week long.

This Is More Important Than Veggies When It Comes To Losing Weight

Before I give you the recipe, I just want to give you some tips that will help you with your weight loss and fitness goals.

Because it’s not just about cooking even though it’s a big part of it.

I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.

So I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.  The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.

Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

Ok, here is the recipe.

Roasted Vegetable Marinara

Ingredients:

1 eggplant

2 zucchini

2 yellow squash

1 red pepper

1 jar low sodium, low sugar marinara sauce

Italian seasoning to taste

s&p to taste

Parmesan or Shredded Mozzarella Cheese to taste (optional)

coconut oil spray

Instructions:

Pre-heat the oven to 425.  Meanwhile, roughly chop all the veggies and put them in a baking dish lightly sprayed with coconut oil spray.  Sprinkle italian seasoning and s&p to taste and run your fingers through them mixing the veggies and seasoning well.  Pour some marinara sauce on the veggies and with a spoon, mix well so that all the veggies are covered in sauce.  Sprinkle a little Parmesan and/or Shredded mozzarella to taste (a little goes a long way).  Bake for ~ 20-25 minutes.

You are going to love this recipe.  Seriously, its insanely good.

Its great for if you are cutting back on carbs and need a good side dish for your protein.  You can slice some avocado on top and serve this with some grilled chicken for a delicious and super healthy meal.
