The Best Butternut Squash & The Quickest Way To Cut & Cook It

Ok, so, I love BUTTERNUT SQUASH, but man is it a pain to cut it.  

I especially eat it when my kids have been babies because I puree it a lot for them.  Its so nutritious.  

So I take advantage to make some for myself.

But these days being a crazy busy mom of 2 and trying to run a business at the same time, week night meals have to be super fast. 

So I was looking on Pinterest the other day (I’m so obsessed with Pinterest)……  Are you on it by the way?

Anyhow, I read up on a super quick and easy way to cook the butternut squash.  Because I literally hate cutting that thing.  Its so hard, it takes forever to peel, its just a pain.  So get this……  You can cook the darn thing WHOLE.  Yes, no cutting, no peeling, no mess.  I can’t believe all these years and I didn’t know this.

So here is what you do:

  1. Place the whole squash on a lined baking sheet.
  2. Bake it at 400 degrees for ~ 25 minutes.
  3. Take it out of the oven and let cool.
  4. The skin will come of easily and then, slice it in half, take the seeds of and cut into chunks.

I was so excited that it literally took me about 1 minute to peel and cut this thing. It usually takes me like 15 minutes to battle with it.  I usually end up asking my husband to dig into it. LOL.

So once I cut it into chunks, I mixed a few spices together in a little bowl and gently rubbed then onto the squash and baked them again for about 15 minutes.  Once out, I drizzled it with a little EVOO…… It was to die for.

By the way, before I give you the recipe, I just want to give you some tips that will help you with your weight loss and fitness goals.

Because it’s not just about cooking even though it’s a big part of it.

I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.

So I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.  The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.

Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

  • 1 tsp Cumin
