Believe it or not I used to not like salmon.
But now, I love it.
That is why I know that food is all about acquiring tastes.
I also remember hating oatmeal many many years ago, and now I can’t go a day without eating oatmeal. I look froward to having it every morning. I also bake tons of healthy snacks with oatmeal. I love using it to bake healthy cookies, pancakes and muffins. I have tons of recipes if you want to check them out on My Pinterest Page.
Anyhow, Salmon is so yummy, I make it all the time now. And it’s so good for you.
I love that both my kids love salmon also 🙂 Now I just have to work on my hubby liking it.
Do you eat salmon? Do your kids?
If they don’t or you don’t, I would recommend to start making it in small portions and in different ways using different flavors. You may find that after a few times, you end up liking it, maybe even loving it like I do now.
There are so many health benefits of salmon.
- High in protein.
- High in Omega-3 fatty acids which your body doesn’t make so you need to ingest it from food.
- The high fat helps you feel fuller longer.
- High in Vitamin D & B’s.
- High in Selenium which helps fight disease.
- High in Phosphorus which helps strengthen bones and promotes a healthy heart.
I love making salmon because it cooks super fast and there are so many yummy ways to make it.
This recipe I used a Tex-Mex spices for the salmon and then I made a really easy and yummy salsa. I added some fresh LIME JUICE to it which just brings out the flavor and adds freshness to it. It is so yummy.
I used my new Citrus Juicer, thanks to Cookeezi. It is probably the best citrus juicer I have ever used.
It’s strong and sturdy, easy to hold and in one squeeze I got all the juice out of the lime. It sure beats pinching it with a fork and getting hand cramps from squeezing the lime. Anyhow, here is the recipe.
Tex-Mex Salmon With Black Bean Corn-Avocado Salsa
- 4 Salmon Fillets
- 2 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic and onion powder
- 1 tsp paprika
- S&P to taste
- 1 can black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 small container of diced pimentos, rinsed and drained
- 1/4 cup fresh cilantro, chopped
- 1 avocado, peeled, seeded and diced
- Juice of 2 limes
- S&P to taste
- Pre-heat the oven to 375 degrees.
- Mean while, mix the spices and S&P to taste and spread over the salmon, massaging well and bake in the oven for ~ 15 minutes or until your desired color of pink.
- In a separate bowl, mix the salsa ingredients except for the limes and avocado.
- Slice the avocado in half and use your cookeezi citrus juicer to juice half a lime over the avocado to prevent it from browning.
- Then dice it into the salsa.
- Fold it in gently and juice the rest of the limes and incorporate gently.
- Keep the salsa refrigerated while the salmon bakes.
- When Salmon is done, plate, and serve with the salsa over top.
Ok, seriously, this is by far the best salmon recipe I have ever made. It is insanely good and super easy to make. I am so happy that Cookeezi gave me this “Restaurant Style” Juicer. It makes using citrus so much easier. Now I’m inspired to make more recipes to use my juicer.
By the way, it’s so easy to clean. I love it!
