Sun-dried Tomato Turkey Meatballs

New ground turkey recipes, seems like everyone is always looking for them.  I guess we get tired of the same ol’ meatloaf and meatballs.  Which is why these sun-dried tomato turkey meatballs are so good.  They are different, easy to make and so yummy.

I am always trying to come up with new and yummy ways to enjoy eating healthy.  Because with as many times as we need to eat in order to speed metabolism and burn calories all day long, we need to be able to have lots of options.

Remember that eating good consistently is what will give you good results.  Invest the time into making your healthy food taste good so that you can enjoy it and be more consistent.  But don’t worry, it won’t take you too much time.  I have already done the dirty work for you.  I have Pinterest Boards full of healthy recipes that are great for week night meals.  They are all super healthy, clean and most of them gluten-free and paleo.

Sun-dried Tomato Turkey Meatballs

Ingredients

Scale
  • 2 lbs lean ground turkey
  • 1/41/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parsley, chopped
  • 3 garlic cloves, minced
  • 1/2 cup plain Greek yogurt
  • 2 egg whites
  • 1 1/2 tbsp Italian seasoning
  • s&p to taste
  • Optional: few tbsp grated Parmesan cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. Meanwhile, in a large bowl mix all the ingredients.
  3. Form into little balls and place in a lined baking sheet and bake for ~20-15 minutes or until done.


 

These are delicious.  I served them for my hubby and son with some brown rice pasta, broccoli chopped up and a little organic marinara sauce.  The loved it!  I had them myself with a little brown rice pasta, a ton of broccoli and a drizzle of EVOO.  It was so good….. Oh, and I drizzled a tad of balsamic glaze over the whole plate.   It was simply spectacular.  And for such a healthy meal, it was amazing!
