My trick to eating clean during the weekend is having some yummy and healthy treats in my fridge.
So on Thursday or Friday, I always take a few minutes to whip up a recipe for a healthy snack.
I can’t tell you how much healthier I eat since I have been doing this. And I even have clients who tell me that they eat a million times better when they have healthy treats available for the weekend.
I guess its because we eat so clean during the week, and we are “In Routine” that its much easier to eat healthy during the week. But when the weekend comes, most people’s mind set is to let loose, have their cheat meals (which ends up being cheat weekend), and go out and have fun.
Now, I’m not saying don’t go out and have fun. But you have to be moderate in your “cheating” or you can ruin your hard work from all week in just 2 days.
I usually want something sweet on the weekend. Something like a chocolate chip cookie. So I always make some sort of a healthy cookie and have them available. Its great because if we are out and about I can just put them in a little bag and throw them in my purse.
What’s best, is that they are so delicious that I don’t feel bad when everyone else is eating “crap”. I don’t feel like I’m missing out because I am enjoying my snacks so much. Strawberry-Chip Coconut Protein Bars
- 1/4 cup gluten-free oats (Bob’s Red Mill)
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 cup shredded coconut
- 1 scoop vanilla protein powder (Prograde)
- 1 (15-oz) can garbanzo beans, rinsed and drained well
- 1/4 cup Agave nectar or Stevia to taste
- 3 tbsp coconut oil, melted and cooled
- 1/4 cup unsweetened applesauce
- 2 tsp pure vanilla extract
- 3 tbsp chocolate chips (Dream Gluten & Dairy Free)
- 1/4 cup freeze-dried strawberries
- Preheat the oven to 350 degrees.
- Meanwhile, in a food processor, blend the beans, oats, baking powder and soda, protein powder, agave, oil, applesauce and vanilla.
- Blend until smooth and then fold in chocolate chips and strawberries.
- Pour into a coconut oil greased 8×8 pan and bake for ~25-30 minutes or until done.
What is really great about these is that you can add whatever flavors you want to the base. Once you blend it, you can add almonds, walnuts, fresh or freeze dried fruit of your choice, more shredded coconut, carob chips, etc. You can change up the flavors every time you make them.
Because I promise, once you make them once, you will want to make them again. They are delicious and super easy to make. And every single ingredient is good for you and they are gluten-free.
And you can cut a piece, put it in a bag and take it with you on the go for a healthy snack or even for breakfast.
