How does a Strawberry-Banana Muffins sound for a healthy breakfast?
Too good to be true?
Well, its not!
You can actually enjoy a strawberry banana muffin Guilt-Free. Doesn’t that sound amazing?
Sure beats eating the same ol’ bowl of oatmeal every morning. Now, I’m not saying that eating oatmeal every morning is bad, I actually really enjoy my bowl of oatmeal. But it is really good to be able to have options, that way you don’t feel like you are on a diet.
And these muffins have healthy fats, protein and healthy carbs all in one, so its a great grab and go meal. And though is sounds delicious for a healthy breakfast, it can be a really good healthy snack option, especially if you are on the go.
I made a really great GROCERY SHOPPING LIST that where I divided it up in Fridge, Pantry and Freezer Sections and in there is everything you need to have in stock to make healthy snacks like this. Actually you can probably make any Healthy Recipe on My Pinterest Page if you stock up on all of it. You will be able to have a super healthy week if you do.
But most importantly, don’t EVER skip breakfast as it one of the most important meals of the day and gets your metabolism going. So if you don’t have one of these, opt for a healthy bar that you can always have on hand. The only one I have found that is 100% natural ingredients, no GMO’s and organic is DALES BARS. By the way, before I give you the recipe, I just want to give you some tips that will help you with your weight loss and fitness goals.
Because it’s not just about cooking even though it’s a big part of it.
I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.
So I have to make sure you are not eating one or more of foods on this list. Because if you are, it can be completely SABOTAGING your results. Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT. The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.
Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

Strawberry-Banana Protein Muffins
- 2 cups almond meal (I use Bob’s Red Mill)
- 1/2 cup coconut flour (I use Bob’s Red Mill)
- 1 scoop vanilla protein powder (I use PROGRADE)
- 6 eggs
- 3 tbsp agave nectar
- 1 tsp vanilla extract
- 1 tbsp coconut oil, melted
- 3 tbsp each of freeze dried strawberries and bananas
- 1 tsp cinnamon plus 1 tbsp
- 1/2 tbsp coconut or brown sugar
- 3 tbsp sliced almonds, toasted
- Preheat the oven to 350 degrees.
- Meanwhile in a large bowl, mix the eggs, vanilla, extract, oil and 1 tsp cinnamon.
- Mix well and then add the almond and coconut flour.
- Mix well to incorporate and then fold in the freeze dried fruit.
- Line a muffin pan with liners or grease lightly with coconut oil, if not using liners.
- Divide the mixture evenly among 12 muffins. Bake for approximately 15 minutes. Meanwhile, in a small bowl, mix the 1 tbsp of cinnamon, sugar and almonds. Take the muffins out after 15 minutes, sprinkle the cinnamon almond mixture on top and bake for another 10-15 minutes or until done.
These are delicious and super simple to make. They are also very versatile. You can use whatever flavors you want. You can add freeze dried blueberries or raspberries, you can also add shredded coconut or chia seeds, or even fresh fruit and nuts.
Make 2 dozens and freeze a dozen for the following week.
Remember, the key to getting results is being prepared. So get in the kitchen my friend and start cooking!
