Sprinkle Chocolate Chip Protein Muffins

If your mornings are busy like mine, you probably struggle to get a good and healthy breakfast in because….. well, it’s all about the kids.
Then you get home after dealing with the kids, working, running errands and you are famished and either OVER-EAT or make “bad choices”.

Either way, it’s not helping you get towards your fitness and health goal.
Yet, breakfast is one of the most important meals of the day and will get your metabolism going as well as prevent cravings and binge eating later.
This is a delicious and easy recipe that you can make on a weekend or when you have extra time.
I made these while I was cooking dinner the other night.
By the time I was done cooking and cleaning up, I was done making these as well and they just had a few more minutes in the oven.
These muffins are literally like having DESSERT FOR BREAKFAST.

My 8 year old daughter had one last night and said…
“Mommy, what is in here, they are so good, are these sprinkles healthy?”
Yup… they got sprinkles on them and they ARE healthy… Keto, actually.
What I love about muffins, aside from how delicious and healthy these are…
Is that you can grab 1-2, pop in the microwave for 30 seconds and even eat them on the go.
It makes breakfast super easy and quick.
So if your excuse for not starting your day with a healthy breakfast was time…

🧁Sprinkle Chip Protein Muffins🧁
Ingredients
🧁3 bananas
🧁2 eggs
🧁1/3 cup almond butter
🧁1 tsp vanilla extract
🧁1-2 tbsp almond milk
🧁3 Stevia packets
🧁2 scoop mPower Protein Powder
🧁1 cup almond flour
🧁1/4 cup coconut flour (can sub with oat flour)
🧁1 tsp each of baking soda and baking powder
🧁Chocolate chips to taste (i use dairy free)
🧁Sprinkles to taste (I use keto ones)
Instructions
🧁Preheat the oven to 350 degrees.
🧁In a food processor or blender, blend all the ingredients except chocolate chips and sprinkles.
🧁Once mixed well, pulse in the sprinkles and chocolate chips.
🧁Pour into a greased muffin pan.
🧁Top with a few more sprinkles and chips on each muffin.
🧁Bake ~20-25 minutes or until done.
