Spinach Tomato Egg Muffins

  1. 12 Egg whites
  2. Spinach
  3. Tomatoes, chopped
  4. Salt & pepper to taste
  5. Seasoning of choice to taste: ex: Italian seasoning
  1. Preheat the oven to 350 degrees.
  2. In a muffin pan, sprayed with coconut oil spray or with coconut oil.
  3. Put in each muffin a little spinach and a little tomato.
  4. Put a little seasoning and s&p in each one.
  5. Crack an egg and pour one egg white in each one.
  6. Bake for ~15-20 minutes or until done.
  1. You can use any combination of veggies and your favorite seasoning to add flavor.
  2. If you want to do some whole eggs, you can just whip say 4 whole eggs and 8 egg whites and pour in each muffin pan.
