Quinoa is even better for you and cooks faster. And not only that, but it is so versatile, there are so many different ways to cook it. You can use it in soups, in casseroles, as sides, in salads, with vegetables…
Quinoa is actually a complete protein. It has all 9 essential amino acids. But its still considered a carb, so make sure to add some protein when you eat it.
I hope you are eating carbs because you don’t need to omit them totally if you are trying to lose weight, you can totally lose weight and still eat HEALTHY carbs.

This recipe has tons of spinach which I love. And I love it for kids and picky eaters because spinach doesn’t have a very strong taste, it actually doesn’t really taste like anything. But it adds fiber and nutrients.

Spinach Quinoa with Chicken
- 2 cups of quinoa
- 1 package frozen spinach, thawed and drained
- 2 lbs chicken tenderloins
- Grill seasoning to taste
- 1/4–1/2 cup crumbled goat cheese (optional)
- Preheat the oven to 350 degrees.
- Sprinkle grill seasoning on the chicken and bake for ~ 20 minutes.
- When done, chop in to cubes.
- Set aside.
- Meanwhile, cook the quinoa as directed.
- As soon as the water boils and you add in the quinoa, add in the spinach also.
- Stir well, cover, lower heat and simmer.
- When done, mix well and fold in the chopped chicken.
- If adding cheese, add it now and mix well.
- It will get creamy and delicious.
- If your family doesn’t like goat cheese, you can add whatever cheese you want.
What is great about this dish is that the clean up is quick and you are basically done with dinner in 20 minutes and in one pot you have your protein, starch and veggies. I had tons of left overs and my family enjoyed them just as much.
You can add in shrimp, fish, steak, turkey. You can fold in other veggies if you have left overs. You can even make it an easier dinner and make this on a night that you already have left over chicken, then it will take you just like 12-15 minutes while you cook the quinoa.
Who says its hard to eat healthy?
