Spanish Chicken Crockpot Recipe

  • 2 lbs of chicken breasts
  • 1 red onion, diced
  • 3 garlic clove, crushed
  • 1 red bell pepper, diced
  • 4 plum tomatoes, diced
  • 8 oz water
  • 8 oz can tomato sauce
  • 2 tsp oregano
  • 2 tsp cumin
  • 2 tsp grill seasoning
  • 1 tsp paprika
  • salt and pepper
  • 2 bay leaf
  • 1/2 cup chopped cilantro


  1. Layer all the veggies in the crockpot first.
  2. Then add the dried spices, s&p, and tomato sauce and water.
  3. Add in the bay leaf and layer the chicken at the very top.
  4. Put the crockpot on high and cook for 3 hours
  5. Then take the chicken out and shred and put it back in for another hour or two.
  6. Top with fresh cilantro and serve.
