Roasted Sweet Potato Salad

  1. 3 ¾ lb sweet potatoes, cubed
  2. ½ cup shallots, sliced
  3. 1 red pepper, chopped
  4. 3 tbsp rice wine vinegar
  5. 5 green onions, chopped
  6. 2/3 cup cilantro, chopped
  7. Stock and grill seasoning
  1. Preheat oven to 400 degrees.
  2. Sprinkle potatoes with grill seasoning and roast for 20-25 minutes until tender.
  3. Transfer to a bowl.
  4. In a skillet add stock and sauté shallots, and pepper until cooked.
  5. Mix in green onions and stir for a few seconds.
  6. Add potatoes to mixture and cilantro.
  7. Drizzle the vinegar on top and fold in.
