I am so happy that they sell pumpkin in a can all year long because I love me some pumpkin in my healthy muffin recipe even in the summer time.

Other than chocolate, my other favorite ingredient is PUMPKIN.

I made these the other day and when they came out of the oven my son was like “mommy it smells really yummy, what is that?”

I know I have a winner when my 5-year old loves it.

So as soon as they came out of the oven I made 2 cups of coffee, one for me and one for him.  Don’t freak, its just milk with a little dash of instant coffee. 

Anyhow, we sat down and devoured the muffins.  He kept asking me for more.  And a few minutes later, my 18-month old woke up from her nap and was all over our muffins.  She ended up eating 3 by herself and was asking for more, but I had to stop her or I wouldn’t have snacks for the rest of the week LOL.

Having snacks for the week is one of the reasons that I feel I can be consistent with eating right.

Its sort of easy to have the main meals. I mean, everyone eats breakfast before they leave the house.  Everyone has a lunch break, and everyone sits down for dinner with their family.

But its those in between meals that screw people up.

Because you are busy, out and about with the kids or working and then too many hours go by without eating and then you have low blood sugar because its been 4 hours since you have eaten and then its pretty impossible to have WILL POWER because at that point your body is screaming…..  Give me SUGAR and give it to me NOW!

Another thing that happens when you miss meals or snacks is that if you do make it to the next meal without PICKING at “crap”, then when you have that next meal, you end up either over eating at that meal or you end up eating shortly after the meal because you are still hungry.

Don’t make that mistake.

That mistake can cost you tons of calories and pounds of fat!

Mini Chocolate Chip Pumpkin Protein Muffins

Ingredients

Scale
  • 1 can pumpkin puree
  • 1/4 cup almond butter
  • 1/3 cup coconut flour
  • 4 stevia
  • 2 eggs + 2 egg whites
  • 2 scoops mPower Protein Powder
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tbsp coconut flakes
  • 4 tbsp dairy and gluten free chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray coconut oil spray in a mini muffin pan (24), meanwhile beat the eggs and add in the rest of the ingredients except for the coconut flakes and chocolate chips.
  3. Mix well and then fold in the coconut flakes and chocolate chips.
  4. Pour batter into the muffin pan and bake for ~ 25 minutes or until done.

I hope you love this recipe as much as my kids and I did.

You will be glad that you can make these all year round thanks to canned pumpkin.
