Orange Chicken & Edamame
Eating healthy can be boring if you eat bland and boring chicken, tuna and fish every day.
But if you invest a little more time (which is worth it), it can also be delicious, enjoyable and fun.
It is also, so much easier to be more consistent, when you are enjoying what you eat…….. When you don’t feel DEPRIVED. After over 15 years in the health and fitness industry, I have found, that those that get the best results are those who have found the way to enjoy the healthy lifestyle. Those who exercise because they grew to like it and the way it makes them feel. Those who truly enjoy eating healthy because they don’t DIET. Because they eat something different every day and they like it.
When you reach this point, my friend, you will get really good results.
That is why I am totally dedicated to coming up with new recipes and ways to help you enjoy the process of getting or being healthy. Because it makes that much of a difference. That is why I have Pinterest Boards full of healthy recipes and healthy snack recipes and even healthy cooking strategies. It makes that much of a difference.
From the moment I started truly enjoying what I ate, that is when I, myself, started seeing even better results. I love to eat, and I love to eat healthy….. because its yummy. I love to open up my book Eat To Be Fit and make my weekly menu. Its fun, and its yummy! By the way there are over 300 healthy recipes in there.
Chicken is something everyone eats when “dieting”. But come on….. how many times a week can you eat grilled chicken…. yuk! Who the heck can eat like that for more than a few weeks without falling off the wagon.
As for me, I would rather eat a chicken dish like this one that is just as healthy, filled with veggies, nutrients and bursting with flavor.

Orange Chicken & Edamame

Orange & Edamame Chicken
Ingredients
- 2 lbs chicken breasts, cut into chunks
- 1 cup edamame, shelled
- 1 red pepper, chopped
- 1/4 cup shredded carrots, chopped
- 1/2 cup cilantro, chopped
- 1/2 tbsp fresh grated ginger
- 1/2 orange, juiced
- 2 tbsp lime juice
- black sesame seeds to taste
- avocado, sliced
Instructions
- In a bowl, mix the orange and lime juice with the ginger and s&p to taste.
- In a large saute pan with a little stock, cook the chicken, red pepper and carrots.
- When cooked through, add the orange mixture and edamame.
- Cook for a few minutes.
- Top with cilantro and sesame seeds and garnish with avocado slices.
This can become one of your go-to week night meals. It really is so good and so easy. Whip it up in less than 30 minutes. And make sure to make extra so that you can have it for lunch the next day. Remember, being prepared is the key to getting great results.
