Maple Cinnamon Protein Bars

  1. 1 cup oatmeal, divided
  2. 3 tbsp almonds, unsalted
  3. 4 scoops vanilla protein powder
  4. 1 tsp cinnamon
  5. ½ tsp salt
  6. 1 cup unsweetened applesauce
  7. 1 tsp vanilla extract
  8. 2 tbsp low sugar maple syrup (or a drizzle of maple extract)
  9. 2 tbsp Agave Nectar (or stevia to taste)
  1. Pre-heat oven to 350.
  2. In a blender, process ½ cup oatmeal into oat flour.
  3. In a bowl stir the oat floar, remaining oatmeal, chopped almonds, protein powder, cinnamon, and salt.
  4. Then combine applesauce, vanilla, syrup and agave.
  5. Mix together with dry ingredients. Put coconut oil or coconut oil cooking spray on a mini-loaf pan and pour mixture.
  6. Bake for 18 minutes.
