- 2 cans of chopped hearts of palm, rinsed and drained
- 1/2 red onion, diced
- 1/2 cup cilantro, chopped
- 1/2 cup cherry tomatoes, chopped
- 2-3 Hass avocados, chopped
- 4-6 tbsp white vinegar
- 2 tbsp EVOO
- Mix all the ingredients in a bowl and serve chilled.

On days like that I whip up this salad. Its one of my favorites and you usually have all the ingredients in your pantry and in your fridge.
