Healthy Vegetable Recipes

 

I know that it can get hard to eat a protein, a carb, and a VEGGIE every 3 hours……..well at least the veggie part is hard……I hear it from my clients all the time.  I don’t think it’s so much that it’s hard, but that people just don’t like eating veggies. 

With these yummy veggie recipes,  you are going to start loving veggies.  At least that is what the ladies that do my BeFit Moms Meal Plan tell me.  After having so many easy and yummy healthy veggie recipes in their weekly meal plans, they have started to eat them more and benefiting from them.   They also say that they have been able to get the KIDS to eat more veggies too, just love that, it is awesome.  It’s amazing what just having a good plan with variety and delicious foods can do in terms of sticking to “A DIET”.  That is why, I, myself, follow my BeFit Moms Meal Plan on a daily basis.  Without it, I would be lost.  It’s great knowing I don’t have to think about it, i just take my SHOPPING LIST to the grocery store, get everything and then every day look at my meal plan.  And both my kids love them also, and hubby too 🙂  

Let me explain why eating veggies is so important, other than the obvious of the vitamins and their nutritious value.

Vegetables are a thermic food which means that it is very hard for your body break them down………so you burn a lot of calories in the process of digestion.  Bottom line……..You eat veggies, you burn calories! So don’t miss out on them, check out the healthy veggie recipes below to see how you can increase your veggie consumption and your caloric burn.

I also think that people don’t eat vegetables because the thought of bland broccoli just does not sound very pleasing.  But it doesn’t have to be that way, if you take the time, you can make some really delicious fat burning recipes for vegetable dishes.

If you are going to eat like this as a lifestyle, you have to be able to enjoy it.  So, though it might take you a few more minutes, take the time to make them yummy.  Look for fat burning recipes for vegetables in cookbooks, magazines, online.

Here are a few fat burning recipes for you to try.  I have a tremendously busy schedule, so if you are already thinking of a million excuses why you can’t……. STOP!  Do you want to be lean, toned, and sexy?  Then you gotta take some time girlfriend!  If you organize yourself you can do it.

Here is what I do: 

Making the protein and carb dishes is pretty easy for me to do daily (though a lot of times I pre-make in bulks).  But veggies are more of a pain to cook, so I make all my vegetables for the week on Sunday or Monday.  Maybe that can work for you…….Make all your vegetable dishes on one day, and store them in Tupperware’s in the fridge.  I hope you enjoy these, they are simple and delicious!

By the way, before I give you these recipes, I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy, but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.

Healthy Vegetable Recipe #1:  Cashew Curry Asparagus

1 pound asparagus spears, trimmed
2 tablespoons cashews roughly chopped cashews
1/2 cup fat-free cottage cheese
1 teaspoon curry powder
1/2 teaspoon lemon juice
Pinch salt

Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.

On baking sheet, line the trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in oven for 8 to 10 minutes depending on the size of the asparagus. While asparagus is roasting, prepare dressing.
Process 2 tablespoons of cashews in a blender until finely ground, add cottage cheese, curry powder, lemon juice, and salt. Set aside. Drizzle on top of the asparagus and serve.

Healthy Vegetable Recipe#2:  Zucchini Boats

Ingredients:
4 zucchini, halved lengthwise
½ red onion, chopped
3 plum tomatoes, chopped
1/3 cup sliced almonds (optional)
½ tsp dried oregano
6 ounces shredded fat-free mozzarella
¼ cup low sodium parmesan cheese (optional)

Instructions:
Preheat oven to 375 degrees.  Using a small spoon, scoop out the zucchini flesh.  Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes.  Meanwhile, in a skillet heat non-stick spray and add the zucchini flesh, and onion cook for about 5 minutes.  Now add the tomatoes and cook another couple of minutes.  Remove from heat and stir in the nuts and oregano.  Flip the zucchini shells and line the bottoms with the mozzarella cheese.  Pack in the veggie filling and sprinkle with a little parmesan.  Bake until the zucchini is tender about 20-25 minutes.

There is no need to eat bland and boring food in order to LOSE WEIGHT & GET FIT!

You can actually still get amazing results and feel like you ARE NOT DIETING. And you can actually enjoy what you eat and not feel deprived.
