Healthy Recipes: Summer Veggie Turkey Meatloaf

Weeknights are always so busy.  Especially dinner time because in a short amount of time I have to feed, bathe, bottle and put nico to bed….yikes!  So it is really great to have some quick go to healthy recipes that are simple, yummy and easy to make.  I know that you are busy too.  Between work, the kids and the home, we are always looking for an extra hour here or there to get more done.  That is why I love ground turkey recipes.  They are versatile and usually no fuss meals that can me done in 30 minutes or less.

So that is why I am always working on bringing you great healthy recipes that you can make your own and that are fast and easy to make.  Today’s recipe was super easy and deelish.  I had some left over sautéed summer squash and zucchini from a prior night.  So I used these veggies for my meatloaf.  If you don’t have these leftover, it takes just 5 minutes to sauté these veggies in a little low sodium stock with some garlic.  You can also use whatever leftover veggies YOU have in your fridge.

Healthy Recipes: Summer Veggie Turkey Meatloaf

Ingredients

Scale
  • 2lbs ground turkey breast
  • 2 egg whites
  • 2 tbsp Dijon mustard
  • 1/4 cup organic ketchup + 2 tbsp
  • 1/4 cup balsamic vinegar + 2 tbsp
  • 1/3 cup parsley, chopped
  • 2 tbsp grill seasoning
  • 2 squash and 2 zucchini, chopped and sauteed

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, mix all the ingredients except the 2 tbsp each of vinegar and ketchup.
  3. Form into a meatloaf and place on a lined baking dish.
  4. In a small bowl mix the vinegar and ketchup and drizzle over top of loaf and bake for 20-25 minutes or until done.

 

This is also a great snack.  You can throw it in a ziplock bag and throw it in your purse for a great healthy on the go snack.  You can make this healthy recipe into meatballs or mini meatloaves.  Its also very versatile in that you can use whatever vegetables you want.  

Play with it and have fun and make it your own.  Its easy, delicious and super healthy.
