Healthy Recipes For Tex-Mex Rice Pilaf

I get so bored of eating plain brown rice, don’t you?

Have you tried Jasmine Rice?  Its also good for you and gluten-free, and it is delicious and when you are cooking it, it makes your entire house smell amazing.

So, since I hate eating the same ol’ boring food all the time, I love to try new ways to enjoy the same healthy food.  And I love any kind of tex-mex or mexican food or flavors so that was my inspiration for this delicious and healthy rice pilaf.

And this side dish would go great with My Summer Veggie Turkey Meatloaf, which by the way you can find the recipe for it on My Pinterest Boards as well as tons of other delicious and healthy recipes.

Tex-Mex Rice Pilaf


2 cups jasmine rice

1/2 onion, chopped

2 garlic cloves, chopped

1 can diced tomatoes with juice

2 tsp cumin

1/2 cup cilantro, chopped


In a saute pan with a little stock, sauté the onions and garlic, then add the rice, cook for a minute and add in 4 cups of water, cumin and tomatoes.  Lower heat, cover a let simmer until cooked.  Once cooked, fluff with a fork and fold in the cilantro.
