Tasty Snacks Tuesdays is one of my favorite days of the week.  I just love all these healthy snacks recipes.  I guess it could be because I love food so much but honestly, if you are making all these healthy recipes that I have been posting on My Pinboards, then you are probably just as happy as I am on Tuesdays.

Actually my morning snack today was this amazingly delicious Protein Oatmeal Casserole.  It is like a platter of goodness.  Its healthy, comforting, tasty, fruity and just simply divine.  I had this with a good cup of coffee (thank goodness for my Keurig), and man was I one happy camper.

What I love about this healthy snack is that I have my protein, healthy carbs and healthy fats all in one dish.  It doesn’t get better or easier than that.  And it was so easy to make.

Nothing beats being prepared peeps.  That’s why I give you all these healthy recipes and I always tell you to PLAN PLAN PLAN.  Eating healthy and getting great results is EASY when you are prepared and when you can TRULY ENJOY it.

Nothing SUCKS more (excuse my language), than feeling deprived, hungry and miserable.  There is no need to feel deprived and eat bland and boring food in order to get great results.  So stop thinking and talking about it and saying “one of these days I’m going to make one of Michelle’s recipes“, and start actually making them.  I promise you won’t regret it.

By the way, before I give you the recipe, I just want to give you some tips that will help you if you are trying to lose weight, get leaner, get more definition, feel more energy, get healthier, and more toned.

Because it’s not just about cooking even though it’s a big part of it.

I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.

So I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.  The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.

Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

Healthy Recipes For Protein Oatmeal Casserole Goodness

  1. 2 cups oats (I used gluten-free)
  2. 4 Tbsp cup coconut sugar
  3. 1 tsp baking powder
  4. 2 tsp cinnamon
  5. 1 1/2 scoops vanilla protein powder (I used BB3 Formula 1)
  6. 1/2 cup walnut pieces
  7. 1/4 cup strawberries and 1/4 cup blueberries
  8. 2 cups almond milk
  9. 1 large egg
  10. 3 tbsp coconut oil
  11. 1 tbsp vanilla extract
  12. 1 ripe banana, peeled and cut in slices
  1. Pre-heat the oven o 375 degrees.
  2. Spray a casserole dish with a little coconut oil spray or baste with coconut oil.
  3. In a large bowl mix the oats, coconut sugar, baking powder, cinnamon and protein powder.
  4. In a separate bowl, mix the milk, egg, oil and extract.
  5. Line the dish with sliced bananas and half the berries.
  6. Pour the wet ingredients over the mixtures as to cover it completely.
  7. Tops with the remaining berries and walnuts and sprinkle with a little more cinnamon.
  8. Bake for 30-35 minutes.
