Actually my morning snack today was this amazingly delicious Protein Oatmeal Casserole.
It is like a platter of goodness.
Its healthy, comforting, tasty, fruity and just simply divine. I had this with a good cup of coffee (thank goodness for my Keurig), and man was I one happy camper.
What I love about this healthy snack is that I have my protein, healthy carbs and healthy fats all in one dish. It doesn’t get better or easier than that. And it was so easy to make.
Nothing beats being prepared peeps. That’s why I give you all these healthy recipes and I always tell you to PLAN PLAN PLAN. Eating healthy and getting great results is EASY when you are prepared and when you can TRULY ENJOY it.
Nothing SUCKS more (excuse my language), than feeling deprived, hungry and miserable. There is no need to feel deprived and eat bland and boring food in order to get great results. So stop thinking and talking about it and saying “one of these days I’m going to make one of Michelle’s recipes“, and start actually making them. I promise you won’t regret it.

I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.
So I have to make sure you are not eating one or more of foods on this list. Because if you are, it can be completely SABOTAGING your results. Protein Oatmeal Casserole Goodness
- 2 cups oats (I used gluten-free)
- 4 Tbsp cup coconut sugar
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 1/2 scoops vanilla protein powder (I used BB3 Formula 1)
- 1/2 cup walnut pieces
- 1/4 cup strawberries and 1/4 cup blueberries
- 2 cups almond milk
- 1 large egg
- 3 tbsp coconut oil
- 1 tbsp vanilla extract
- 1 ripe banana, peeled and cut in slices
- Pre-heat the oven o 375 degrees.
- Spray a casserole dish with a little coconut oil spray or baste with coconut oil.
- In a large bowl mix the oats, coconut sugar, baking powder, cinnamon and protein powder.
- In a separate bowl, mix the milk, egg, oil and extract.
- Line the dish with sliced bananas and half the berries.
- Pour the wet ingredients over the mixtures as to cover it completely.
- Tops with the remaining berries and walnuts and sprinkle with a little more cinnamon.
- Bake for 30-35 minutes.
