Oh yeah, I know what you are thinking…….. There is no way a cinnamon roll is healthy. Well, my friends, these healthy muffins taste just like cinnamon rolls but they are healthy. Can you believe it? I know, I could barely believe it when I tasted them. I totally even surprised myself 🙂 I love making these kinds of snacks because they are easy to make, great to make a ton in advance, easy to store, and easy to eat on the road. And best of all, they taste so darn good with a good cup of coffee 🙂 I tried these out one day when I was looking to make a healthy and fueling snack for my family and I to take to my good friend Billy Beck III when he ran 51 miles for the American Cancer Society (he raised $30,000….wow). Anyhow, I got inspired by this amazing cook on healthful pursuit. So I tweaked it a bit and they came out so good.
I love being able to enjoy what I eat. I love that I can truly say that I enjoy eating healthy. Because I love food and I love to eat and if I had to deprive myself all the time, I would be miserable. I know that I wouldn’t get as good as results as I get right now because I wouldn’t be able to be CONSISTENT. And consistency is how you get really good and lasting results. I try to never deprive myself. I have really learned to just eat clean all the time and when I want to eat something that isn’t optimal, to just have a bite and then be done. This has helped me so much. I have never gotten better results than I have now by adopting this way of thinking. And it’s great, I really never ever feel like “I’m DIETING”. I mean there are some foods that I try to always stay away from because they are super INFLAMMATORY and inflammation is not only the root of most DISEASES, but it also doesn’t allow you to BURN FAT effectively. So even if you exercise 7 times a week and eat 800 calories a day…… If you eat some of the foods on “THIS LIST”, you may possibly not be able to burn ONE OUNCE of fat. So before I give you this crazy, to die for, yummy recipe that tastes like a cinnamon roll, I want to give you this list of foods so that you can get them out of your diet and be able to see much better results. I also put together a list of the foods I always have and the foods that are CRUCIAL to include in everyones nutrition in order to not only be healthy but to also be able to lose weight and be able to gain LEAN AND TONED muscle. Healthy Snack Recipe: Cinnamon Roll Protein Muffins
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 scoop mPower Protein Powder
- 1/2 tsp baking soda
- 3 eggs
- 1/3 cup coconut sugar or brown sugar
- 1/4 cup coconut oil
- 2–4 tbsp coconut milk creamer (I used SoDelicious Hazelnut) (eyeball this to get right consistency)
- 1 tablespoon vanilla extract
- Cinnamon Roll topping
- 1/4 cup Gluten-free oats
- 2 tbsp extra virgin coconut oil
- 2 tbsp unsweetened shredded coconut
- 1 tbsp coconut sugar
- 1 tbsp cinnamon
- Preheat oven to 350F and lightly spray a muffin pan (I use coconut oil spray).
- Mix the topping and set aside (oats, coconut sugar, cinnamon, coconut oil, and coconut in a small bowl).
- Combine almond flour, coconut flour,baking soda and protein powder in a medium bowl.
- In another bowl, whisk together eggs, coconut sugar, coconut oil, creamer and vanilla.
- Mix in the dry ingredients into wet, combine well and pour into muffin pan.
- Once you mix in the dry ingredients, if the batter is too thick, add creamer a little bit at a time until you get the right consistency. I eyeballed this part at the end.
- Spoon topping onto muffins and bake for ~ 22 minutes, or until golden brown and cooked through the middle.
- Allow to cool before taking out of muffin pan.
I eat these as an in between meal snack all the time as part of my MMF Healthy Meal Plans E-Book. Yes, sounds crazy, but I actually follow my own MMF Healthy Meal Plans on a daily basis. Yep, I don’t just tell people to follow it, I do it myself. I actually live by it. It’s the only way I can organize myself enough to cook and eat clean meals every day. It’s the only way I can make sure I have yummy meals that are not just good for me and my family but that are delicious and that I enjoy with as crazy and busy life as I have. That means more to me than anything. Because I know that if I don’t enjoy what I eat, I won’t be able to be consistent. That’s just me because I love food and I love to eat. You may not be that way, you may be able to eat bland and boring food and the same food every single day and be just fine and never want to binge or go crazy eating everything. But I certainly can’t be consistent eating that way so I do take a few extra steps in cooking and planning by following my MMF Healthy Meal Plans E-Book, but I get great results and I don’t have to cook “DIET FOOD” for me and other meals for my family.
