Healthy Recipes: Chicken Apple Chili
People looking to get fit and healthy are always looking for another healthy chicken recipe. Chicken is obviously a healthy option but we get stuck on the same ol’ boring recipes and sooner than we think, we are tired of eating chicken. So I am always trying to come up with new ways to enjoy eating chicken the healthy way. So try this healthy recipe. Its delicious, super easy to make and you can even make it in the crockpot. Healthy Recipes: Chicken Apple Chili (8 Servings)
Ingredients:
2 lbs chicken breast cut in chunks
4 tsp chili powder
2 tsp cumin
S & P to taste
2 red apples, diced
1 onion, chopped
2 cups low sodium chicken stock plus more for cooking
2 15ounce cans cannellini beans, rinsed and drained
2 cups part-skim shredded cheddar cheese
Instructions:
In a large pot or Dutch oven, heat stock and add chicken, chili powder and cumin. Season with s&p. Cook until chicken is browned and transfer to a bowl. In the same pot, add more stock and add apples, onions and cook until softened, add the chicken back in. Add the chicken stock, beans and simmer for a few minutes. Add the cheese and stir to combine.
