Healthy Recipe For Sun-Dried Tomato & Basil Cream Chicken

This chicken is so yummy that I had to share it!  Its just as yummy as one of my favorite chicken dishes from my Eat To Be Fit Healthy Recipes Book…… My Stuffed Spinach Chicken (which also has sun-dried tomatoes in it), ohhh its sooo yummy!  And I know everyone is always looking for a good and easy to make healthy chicken recipe.

This would be really delicious with the Mini Quinoa Pizza’s that I posted last week on My Pinterest Board.  So if you don’t know what to make for dinner tonight, get both of these recipes and pair them with a nice green salad and you are going to have raving fans in your home!

Sun-Dried Tomato-Basil Cream Chicken

Sun-Dried Tomato Chicken

Ingredients

Scale
  • 1 1/2 lbs chicken breast cut in chunks
  • 1/2 cup onions, chopped
  • 3 garlic cloves, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup basil, chopped
  • 1/2 cup plain Greek yogurt
  • 3 tbsp low sodium chicken stock
  • grill seasoning to taste

Instructions

  1. In a pan, sauté the onions and garlic in a little stock, then add the tomatoes and a little more stock. Cook a few minutes and then add the chicken and cook until done.
  2. In a small bowl, mix the yogurt and the 3 tbsp of stock.
  3. When the chicken and veggies are cooked, take it off the heat and add the “sauce”, mix well and serve.
