I don’t usually love to eat salads because they don’t really fill me up.
And I definitely don’t like making salads at home, I can possibly eat them out, but not at home.
Unless………….. It’s a salad like this!
Now I love anything with the word hearts in it, so I love hearts of palm, artichoke hearts.… So Yum!
So I play around with them a lot and try to add them to all kinds of dishes.
The salad I’m about to share with you is so delicious, you can make a huge bowl of it and literally eat it in one sitting. Now, I’m not telling you to eat it in one sitting, I’m just saying, I sort of felt like I could (but I didn’t).
By the way, hearts of palm are really good for you, they are high in Vitamin A, Folate and Vitamin B-9. And they are high in fiber.
This salad goes well with anything….. Fish, Chicken, Steak or Shrimp. Actually, it would go amazing with my Almond Breaded Turkey Cutlets, the recipe is on My Pinterest Boards, along with tons of other healthy recipes. It’s easy to make and so yummy. Check it out.

Hearts Of Palm Salad
- 2 cans hearts of palm, rinsed and drained
- 2 Hass avocados, seeded, peeled and chopped
- 3-4 scallions, chopped
- 1/2 cup cilantro, chopped
- 2 limes, juiced
- S&P to taste
- Mix all ingredients in a bowl and refrigerate for a few minutes before serving.
Its important to get your veggies in because it helps you burn more calories, yup its true, so eat them up!
