Everyday, more and more I strongly believe in following a Gluten-Free diet. I just think that any food that causes diseases (Celiac) and diseases and sicknesses that can be cured by the absence of the food, should not be a part of our diet. Plus, I find that so many of my followers on My Facebook Page and Pinterest are also enjoying a Gluten-Free life.
And since it is so easy these days to follow a gluten-free diet, why not? You can still eat delicious food and live gluten-free. My favorite thing to do these days is create and re-creat healthy gluten-free snacks. That is why you see tons of them on My Pinterest Boards. Yes, I have an entire board just for Tasty and Healthy Snacks and they are all gluten-free.
These Protein Muffins are delicious, super moist, and so good for you. Full of great ingredients and gluten-free, you can’t go wrong with these for a healthy snack or even an on the go breakfast. And the kids love these. Even my 2 year old loves them, and they travel well too, I just took them to Disney, yes, I totally took healthy snacks to Disney….Are you surprised?
Now, I am all about moderation, so I still do like some non-gluten-free snacks. I have a few favorites from My Eat To Be Fit Healthy Recipes Book like My Banana Protein Bread. Its crazy good, still health but its made with whole-wheat flour and a ton of other super healthy ingredients.
By the way, before I give you the recipe, I just want to give you some tips that will help you if you are trying to lose weight, get leaner, get more definition, feel more energy, get healthier, and more toned.
Because it’s not just about cooking even though it’s a big part of it.
I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.
So I have to make sure you are not eating one or more of foods on this list. Because if you are, it can be completely SABOTAGING your results. Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT. The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.
Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.
This is so important and makes such a huge impact on your results that I decided to compile these foods into a PDF for you. Ok, here is the recipe. One thing I love about them is that you can make them whatever flavors you like. I make 2 dozen at a time and I make about 6 different flavors, and its super easy.
Fabulous Protein Muffins-Pick Your Spice
- 2 eggs
- 2 cups unsweetened applesauce
- 5 cups quick cooking oats (gluten-free)
- 1 smashed banana
- 2 3/4 cup almond milk
- 1/4 cup flax meal
- 2 scoops vanilla protein powder (I use BB3 Formula 1)
- 4–6 packets Stevia
- 1 tbsp Cinnamon
- 3 tsp baking powder
- 1 tsp vanilla extract
- Toppings: Shredded coconut, dairy & gluten-free chocolate chips, walnuts, freeze dried blueberries, strawberries and raspberries, almonds.
- Pre-heat the oven to 350 degrees.
- Mix all wet ingredients first in a large bowl.
- Mix in the dry ingredients and mix well.
- Lightly spray a muffin pan with coconut oil spray.
- With an ice cream scooper pour a scoop into each and then individually add the toppings you would like.
- With a knife, gently mix it in and then add a few on top so that you know which muffin is which flavor.
- Bake for 30 minutes or until done.
You are going to love these muffins. Let your kids try them, I bet they will love them too. Make sure to tell me what they think.
