  • 2 English Cucumber, chopped
  • 4 scallions, chopped
  • 1/4 cup parsley, chopped
  • Juice of 1 lemon
  • 1/4 tsp cumin
  • 1 tbsp EVOO
  • 1/4 cup cashews, chopped

Instructions

  1. Mix all ingredients in a bowl and chill.
  2. Serve over greens or serve any kind of protein on top or over any kind of protein.
