Healthy Recipe For Apple Cinna-Nut Protein Cookies

What is your favorite thing to snack on?

Mine is cookies, especially Chocolate Chip Cookies as you must know by now.  That is why I always try to come up with new healthy recipes for cookies that we can enjoy without TONS of CALORIES and GUILT.  One of my favorite cookies are My Pumpkin Protein Cookies, thats what I love about this season…. Pumpkin.  By the way, you can get that recipe and the rest of them on My Pinterest Boards.

I normally put a few dairy free and gluten-free chocolate chips in most of my recipes since it literally adds like 7 grams of sugar in the whole batch of cookies but it is always optional.

Pretty much all my recipes can be adjusted with your favorite flavors.  For example….. My Blueberry Egg White Pancakes from My Eat To Be Fit Healthy Recipes Book can be just as delicious with Apples instead of Blueberries, or even strawberries or raspberries. Yumo!

Today, I added apples to the cookies and they are to die for.  So yummy and they seem to go great for the season with a cup of my new favorite Keurig Coffee, Perfectly Pumpkin!  Love it!

What’s great about these cookies is they have protein, fiber and healthy carbs and good fats. So it is the perfect little healthy snack.  And best of all they are great on the go.

Apple-Cinnamon Protein Cookies

Healthy Recipe For Apple Cinna-Nut Protein Cookies

  • 3/4 cup almond meal
  • 2 tbsp flax meal
  • 1 scoop vanilla protein powder (I use BB3 Formula 1)
  • 2 cups oats (gluten-free)
  • 1/2 tsp baking soda
  • 5 Stevia packets
  • 1 egg
  • 1/2 cup coconut oil, melted
  • 1 apple, finely chopped
  • 1/4 cup walnuts, chopped
  • 2 tsp cinnamon


  1. Pre-heat the oven to 350 degrees.
  2. Mix all wet ingredients in a large bowl, mix in dry ingredient and fold in apple and walnuts at the end.
  3. Place on a parchment paper lined baking sheet and bake for 15-20 minutes or until golden brown and cooked.
  4. Let them sit for a few minutes before digging in.

Isn’t it exciting that you can now have cookies that are good for you and they are gluten-free and low in sugar and have protein and healthy fats which of course helps you BURN MORE FAT.
