Healthy Crockpot Meal

 

 

If you have been reading my posts, you know that I am as of this post 6 months pregnant and just recently fractured my toe.  I am on crutches but since I’m 6 months pregnant and just recovering from placenta previa where I was not allowed to exercise for 2 months, so between that and the belly, the crutches don’t feel very stable and its also quite hard to balance with them on one leg and the extra weight. So when I’m at home, I wheel around in a wheel chair.  I can not put any weight on it at all for 3 weeks.  

 

But that isn’t going to prevent me from eating healthy.  So even though the easiest thing to do is to order in or have my husband pick up and avoid the grocery store and cooking.  I had my mom take me to the grocery store.  I made my meal plan as usual and off I went.  And I can’t believe I’m going to show you this as it is extremely embarrassing.  But my mom couldn’t push me in the toddler shopping cart so check out what I used.

 

 

 

 

Yes, that would be in the old people handicapped cart.  A little embarrassing, but I got it done and well, in the end, it was fun and this will be a great picture for my daughters baby book LOL.

 

Anyhow, the other issue is cooking.  So I decided to make all my meals for the week in a crockpot and this recipe is one of my favorites. Nothing is better than a nice, comforting, warm, cozy, and healthy meal.  My husband loves meat so I decided to spoil him with this.  And since its super healthy, I enjoyed it too!

 

It’s ok to eat red meat once in a while as long as it is lean and ONCE IN A WHILE.

Healthy Crockpot Meal

Ingredients

Scale
  • 1 1/2 lbs top sirloin, cut into chunks
  • 56 New Potatoes, quartered
  • 2 cups green beans
  • 2 carrots, peeled and chopped
  • 1 onion, chopped
  • 2 tbsp italian seasoning
  • 1 tbsp Worcestershire sauce
  • 215 ounce cans of tomato sauce
  • 15 ounces of low sodium chicken stock

Instructions

  1. Put all the veggies in the bottom of the crockpot.
  2. Layer the steak on top and pour the tomato sauce, worcestershire sauce, sodium and seasoning. Mix well and cover and put on High for 4 hours or Low for 8 hours.


 

 

This is such a yummy and comforting meal.  And it is a good change up from the regular chicken dinner.  And its so easy and quick to make.

 

I think you and your family will really enjoy this one.  And the left over’s are even better the next day.  So make enough.  We had this with brown rice.  But on a lower carb note, you can have a little bowl of the stew and have a salad on the side.  

 

This is recipe is also very versatile.  You can add more veggies or the veggies of your choice to it.  You can add summer squash and zucchini, spinach, etc.
