Healthy 15-Minute Chicken Recipe

I know how hard it is to get dinner on the table during the week, let alone a healthy dinner.…. right?

I know now more than ever.  Now that my son is in baseball and we are on the field 3 times a week.  Add in there a 15 month old baby and a business.  Yikes!

So trust me when I tell you, I know that it’s hard.

And I know that is one of the main reasons people eat out or just make frozen dinners, pick up food or eat something quick and easy like pasta, sandwiches, etc.

I also know that you really want to lose weight.  That you are trying to be healthy and have your family eat healthier as well.  That you are going to the gym and exercising but the scale still doesn’t budge.

Ugh, I know how frustrating it is.

I remember feeling that overwhelm before I started following my own BeFit Moms Meal Plan.  When I started actually planning my meals for the week, getting all the groceries I needed in one trip and having everything prepped and ready, is when I started eating much healthier and more CONSISTENT.

It’s crazy the stories I hear from clients that follow the BeFit Moms Meal Plan.  Most of them are not eating enough.  Most of them are eating out a lot because “they don’t have time to cook” or “don’t like to cook” or “don’t know how to cook”.  I’ve heard it all.  But it seriously blows my mind when they start the Meal Plan and all of a sudden they know how to cook, they make time for it.  Its crazy!

Well, it really isn’t that crazy.  

Because once you have a plan, a good one and you set aside the time to do your groceries and prep work, its super easy and actually quite enjoyable.

Yep, nothing is better than having delicious home cooked meals every day that are healthy, tasty and you are losing weight.  Just love it!

I just want you to see that it is possible to make super quick and easy week night meals.  I made this one in literally 15 minutes prep time.  And I always make double or even triple the recipe so that I have plenty left overs for other meals.

This Pesto-Tomato Chicken Recipe is seriously mouth-watering good.  Both my kids loved it and the hubby was raving about it.  I served it with some brown rice pasta with spinach.  It was such a yummy dinner.

I love making “Casserole” type chicken meals because it’s basically throw everything in a pan and bake.

Ok, I hope you enjoy this recipe.  It’s been a weekly staple over here lately.  I have been changing it for one of the recipe in the BeFit Moms Meal Plan because the kids love it so much.

Pesto-Tomato Healthy Chicken Recipe


1 bag of fresh spinach

garlic and onion powder to taste

2 lbs chicken breasts

3 tbsp pesto

2 tomatoes, sliced

1/4-1/3 cup shredded mozzarella

Italian Seasoning to taste


Preheat the oven to 350 degrees.  Place the spinach in a casserole dish and sprinkle with garlic and onion and s&p. Place the chicken breast on the spinach and sprinkle with Italian Seasoning and s&p to taste.  With a spoon spread a little pesto on each chicken breast and top with tomato slices and cheese. Bake for 25 minutes or until done.

I can’t wait for you to try this one.  Its so good and literally took no time.  Before the kids or actually with just one I could afford to make 30 minute meals.  But now with 2 kids and a growing business I have time for 15 minute meals. What about you?
