Guilt-Free Pasta & Veggies
So, you know that I am all about moderation and NO DEPRIVATION.
Which is why I like to come up with delicious, guilt-free pleasures like enjoying a bowl of pasta. Well……… not an entire bowl, but a serving.
And with healthy recipes like this, you don’t have to feel bad about eating a little pasta. This will satisfy your “pasta” “carb” craving and it will even be good for you. Its a win-win! The pasta I used is brown rice pasta so it is gluten-free and its also delicious.
What is great about a recipe like this is that it is versatile so you can add whatever veggies you want or even whatever “left over” veggies you have. I chose to use ones that I wouldn’t have to spend extra time cooking. So I just threw in some asparagus into the boiling pasta water a few minutes before it was done….. and voila! You could do this with broccoli also.

Guilt-Free Pasta & Veggies

Healthy Vegetable Pasta
Ingredients
- 1 package of brown rice pasta
- 1 package of asparagus, cut into thirds
- 1/4 cup fresh parsley, chopped
- 1/2 cup chopped walnuts, toasted
- Zest of 1 lemon
- EVOO to taste
- 2–3 tbsp crumbled goat cheese
Instructions
- Cook the pasta per directions.
- When pasta is almost cooked, add in the asparagus and let cook for approximately 5-7 minutes. Then drain the pasta and asparagus and pour into a bowl.
- Add the remaining ingredients and toss well.
- Serve at room temperature.

I made this a vegetarian meal. I like to give my digestion a break sometimes and omit the protein. But if you want to add protein, try adding in chunks of my Almond Crusted Chicken with Orange Balsamic Glaze.
