Guacamole Quinoa Salad
If you have been following me for a while, then you know that I love AVOCADO’S and anything with avocado’s in it. Especially a good guacamole. So when I found this recipe on www.justataste.com , I just had to give it a try. And it was so good that I have to share it with you guys, I only tweaked it a tad, and I normally have to change recipes a lot.

Whew! Had to get that off my chest.
Anyhow, the good thing is that avocado’s are actually really good for you. They are a monounsaturated fat which is a “good fat” and you actually need enough good fats in order to BURN FAT.

Actually, believe it or not, I think one of the reasons I have gotten leaner after having Nicholas is because I increased my healthy fat intake. A lot of people ask me what I do different now than when I had Nicholas and even though running (or sprinting) after a toddler burns tons of calories, one of the biggest changes I see is that I do eat more healthy fats. So there you go, another reason to convince you to increase your fat intake.

If you don’t know what to pair this with, well, here is an idea…. This would be delicious with fish. Especially one of my favorite fish recipes from My Eat To Be Fit Healthy Recipes Book, its my Citrus Pesto Swordfish. Deelish!
Guacamole Quinoa Salad

Guacamole Quinoa Salad
Ingredients
- 1 cup quinoa, cooked (I use the Organic 365 Quinoa from Whole Foods)
- 1 tomato, chopped
- 1/2 red onion, chopped
- 1 garlic clove, minced
- 2 hass avocados, chopped
- 1/2 cup cilantro, chopped
- 1 lime and zest of 1/2 lime
- 2 tbsp EVOO
- S&P to taste
Instructions
- In a large bowl, mix the tomatoes, onion, cilantro and avocado with the cooked quinoa.
- In a separate bowl, mix in the EVOO, Lime juice, zest, and garlic.
- Pour over the quinoa mixture and season with s&p to taste.
This dish is so good, even my toddler loved it. He has eaten it for 3 meals straight! LOL. Its delicious, tasty, refreshing and so easy to make that you would be crazy not to try it!
