Ingredients

Scale
  • 2 boxes frozen artichokes (thawed and drained well)
  • 2 hass avocado’s, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, chopped
  • white vinegar
  • EVOO
  • S&P to taste

Instructions

  1. In a bowl, mix all the veggies, including cilantro.
  2. Sprinkle with S&P to taste and fold well.
  3. Drizzle with EVOO and vinegar to taste as well.
