- 2 boxes frozen artichokes (thawed and drained well)
- 2 hass avocado’s, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/4 cup red onion, chopped
- white vinegar
- S&P to taste
- In a bowl, mix all the veggies, including cilantro.
- Sprinkle with S&P to taste and fold well.
- Drizzle with EVOO and vinegar to taste as well.
