Goey Fruity-Oat Bar

As you know, I eat really healthy all the time, but as you also know, I LOVE TO EAT.  So I have to make sure that I truly enjoy everything I put in my mouth.  That is why every week I make a menu from my Eat To Be Fit Healthy Recipes Book and make sure that all my meals are healthy but delicious.

On the weekends I give myself some slack to have a little fun, but always in moderation.  I think most people fail to see results because they eat good and exercise Monday through Friday and on the weekends they eat so poorly that it basically cancels out all the hard work throughout the week.

Now I am not about to waste my time so I make darn sure I am moderate about my “FUN” on the weekends.  And healthy snacks like this always help me.  All my amazingly yummy and healthy recipes are on My Pinterest Boards. so make sure you are FOLLOWING me on Pinterest.  I have been getting so many REPINS, FAVORITES AND LIKES on my Pins of healthy recipes, it makes me so excited so THANK YOU!

If you didn’t know, my weakness is CHOCOLATE CHIP COOKIES.  I have to have some every week or I will die…..LOL

Anyhow, lately I have been making so many yummy and healthy snacks that I don’t even feel the need to eat anything bad.  Its like I can have my treat and not feel bad about it.  I LOVE THAT.  On Fridays, that I don’t cook (its our eat out night), I make a few healthy treats and it really helps me stay clean yet enjoy myself.  

This healthy bar will help you with that.  Now with snacks like the ones I am posting on my blogs all the time, you can feel like you have a treat and you don’t have to feel bad about it.

Goey Fruity Oat Bars:  Healthy Recipe

Ingredients
  1. 1/2 cup oats (I use Gluten-Free Red Bobs Mill)
  2. 1/2 cup Sun Butter
  3. 1/2 cup Freeze dried blue berries or raspberries
  4. 1/2 cup almonds
  5. 1 tbsp Maple Extract
  6. 1 scoop vanilla protein powder (I use BB3 Formula 1)
  7. 1 tbsp Flax meal
  8. 1/2 cup coconut flakes
  9. 2 tsp cinnamon
  10. 1/4 tsp baking soda
  11. 2 ripe bananas, mashed
  12. Stevia to taste
Instructions
  1. Pre-heat the oven to 350 degrees.
  2. In a food processor, add the coconut, banana, flax meal, cinnamon, maple extract, baking soda and sun butter, and Stevia.
  3. Process until booth.
  4. Add the freeze dried fruit and process a little more.
  5. Remove from processor and place in a bowl and add 1/4 of the almonds and oats and mix well. Line a 9 by 13 baking dish with parchment paper and spread the mixture.
  6. Sprinkle the top with remaining almonds and bake for about 18 minutes.
  7. Let sit for 10 minutes before you slice into bars.

This bar is so good, its chewy, gooey, fruity, nutty.  In other words its just perfect.  Its totally different than My Love At First Bite Granola Bars, but just as good.  So I URGE you to try them.
