Gluten-Free Healthy Rice Crispy Treats

I need you to stop everything and make these today.

Seriously…. THAT good 🙂

And to top it off, I added chocolate chips to them and added protein to them.

These are going to blow your mind or your taste buds lol.

You know me, and if you don’t, you will start getting to know that I LOVE ALL THINGS CHOCOLATE.

As healthy as I like and enjoy to eat, and as important as health and fitness is to me, I need to have some chocolate in my life.

So what I do, is I make sure to always make some sort of a batch of chocolate something.

Which is probably why you see a lot of healthy chocolate muffins, cookies, cakes, etc on my blog. Here’s a recipe for you to try if you love chocolate too.

But the weird thing is, that as long as I have a healthy chocolate anything in my house, I eat so much better.

I binge eat less, I crave less, I eat smaller portions and I am better overall.

I have learned that is one trick to helping me stay on track.

The minute I want something sweet or chocolate or I’m hungry and I don’t have something pre-made, I eat crap or overeat at the next meal.

You should have everything you need for this except 2 ingredients.

You probably don’t have the brown rice puff cereal and you may not have mPower.

Chocolate Chip Protein Rice Crispy Treats

(6-9 Servings)


Ingredients

🍫1/2 cup maple syrup

🍫2/3 cup almond butter

🍫2 scoops mPower Protein Powder

🍫3 cups brown rice crisp cereal

🍫1/2 cup dairy free chocolate chips


Instructions

  1. In a small saucepan, bring the syrup and almond butter to heat and mix well until completely incorporated and smooth.
  2. Mix in the mPower protein powder and then allow to cool.
  3. Meanwhile, pour the cereal into a large bowl.
  4. Pour the syrup-protein mixture into the cereal and fold in well until fully incorporated.
  5. Add in the chocolate chips.
  6. In an 8′ baking dish lined with parchment paper, pour in the mixture and press down with a spatula or hands until evenly distributed and flat.
  7. Place in the refrigerator for at least an hour.

Notes

Optional: If you want a crispier and nuttier taste, place the cereal on a baking sheet or toaster oven and toast for few minutes until golden brown and crispy. Do this before adding the syrup mixture.
