Gluten-Free Coffee Protein Muffins

One way I’m able to eat healthy so consistently is because I eat a variety of foods all the time so I don’t feel like I’m on a diet.
I am a foodie, and I love to eat, so it’s important to me for consistency that I enjoy the food I eat.
That is why I love making healthy treats like this coffee protein muffin.
When I feel like having something sweet or it’s time for a snack, I can enjoy a muffin or 2 and it feels like a treat even though it’s so healthy.
I mostly love having this coffee protein muffin for breakfast or afternoon snack.
Healthy recipes like this or these in the afternoon really help me eat healthy for dinner and not over eat.
I sit down and have a snack. I will have 2 muffins and coffee or tea and it holds me over until dinner not feeling famished.
When too many hour have gone by without eating, you have low blood sugar. When you have low blood sugar, physiologically the body is in a state of emergency and it needs sugar.

At that point, its incredibly had to have will power and not binge on “crap” food. lol
I love coffee. So you can imagine, these little coffee protein muffins were a hit.
I am thinking of trying them again and adding chocolate chips. I’ve made them with sprinkles before, check them out here.
That would be my 2 favorite things in one.
yummmmm coffee chocolate chip muffins, and they’d be gluten-free and high in protein.
I can’t wait to try it.
Actually, you can feel free to try a few. Just after you pour the batter in the muffin pan, add a few chocolate chips to a few of them… BAM!
You’ll have to let me know if you liked them with chocolate chips.

I always make sure to add protein powder to any healthy treat I make, whether that is cookies, pancakes, muffins or anything, really!

Protein helps you feel fuller longer, it also kills the hunger hormone, ghrelin and protein is a very thermic food, your body has to work hard to break it down so you burn lots of calories in the process of digestion.
So having protein in your snacks will also speed metabolism.
