Fresh Quinoa Salad Recipe

Ingredients

  • 1 1/2 cups of quinoa
  • 1 Hass Avocado, diced
  • juice of 1 lemon
  • 1/3 cup frozen green peas, thawed
  • 1/4 cup crumbled feta
  • 1/4 cup parsley, chopped

Instructions

  1. Cook the quinoa as directed.
  2. Fluff with a fork and fold in the rest of the ingredients.
  3. Serve at room temperature.
