Fresh Quinoa Salad Recipe
Quinoa is one of my favorite foods.
Not only is it super versatile and delicious but it is extremely good for you. It is actually the only grain/seed that has all 9 essential amino acids. Making it a complete protein and also a superfood.
Quinoa is great for people with celiac disease or those who are sensitive to wheat and gluten. So give it a try.
The one thing that I always tell people is that quinoa by itself is not that good, but mix in a few ingredients and you have one delicious meal. And the great thing is that you can replace pretty much any rice, barley, wheat berry, couscous, pasta, etc with quinoa.

Anyhow, this quinoa recipe is delicious, and you probably already have all the ingredients at home. Remember, if there is any ingredients in the recipe that you don’t like, you can either omit them or replace them with ones that you like. For example, I add green peas to it, but if you don’t like green peas, you can add edamame instead.

Fresh Quinoa Salad Recipe
Ingredients
- 1 1/2 cups of quinoa
- 1 Hass Avocado, diced
- juice of 1 lemon
- 1/3 cup frozen green peas, thawed
- 1/4 cup crumbled feta
- 1/4 cup parsley, chopped
Instructions
- Cook the quinoa as directed.
- Fluff with a fork and fold in the rest of the ingredients.
- Serve at room temperature.
Seriously, it doesn’t get easier than that for a side dish. I made this the other night and I enjoyed it for a bunch of meals in different ways.
Here are a few ideas:
- Added into a greens salad with a little vinaigrette.
- Added left over grilled chicken.
- Added left over roasted vegetables.
- Added it to a crockpot soup I made.
- Served it on the side with a piece of fish.
Try this quinoa recipe. It super easy and delicious and you can feel really good about feeding your family such a superfood.
