Blueberry Lemon Protein Scones

Ok, yes, maybe I’m on a blueberry kick, but I had no idea these would come out as good as they did but OMG are they yummy.

Have you ever had a scone?

I love them… I love the consistency and the little salty, little sweetness about them.

They are heavenly.

Well, I made these little blueberry protein scones and they were a hit.

The recipe made a ton of them so I got to share with a lot of people and so far the consensus is…..

Everyone has loved them!

I’ve been sending you lots of recipes, I hope you have been trying them.

I send them after I make them myself.

I’ve told you a million times before, how important it is to have healthy pre-made snacks and breakfast options done for the week.

It makes eating healthy on weekdays SO much easier.

It also helps me eat healthier because instead of grabbing one of my kids snacks or leftovers, or something “bad”, since I know I have healthy made snacks, I can just grab them.

Whenever I get out of the habit of doing this, I always make bad choices when I get hungry.

So this is why I keep sending you yummy recipes, in hopes you keep trying them also and finding your faves.

You may not like them all, but you will find several recipes that can become staples.

I hate feeling like I’m on a diet so that is why I’m always making new recipes for snacks.

While I do have my favorites that I will make often, like my oatmeal protein pancakes, I do like having new and fun options to try.

It makes my weeks a bit more exciting and not so “all the same”.

Here’s the recipe.

Of course, I added mPower to add PROTEIN to them because that makes it more of a complete meal and protein helps you feel fuller longer, which always helps me eat cleaner.

Protein also is super thermic, your body has to work really hard to break it down so you burn a lot of calories in the process of digestion.

So I pretty much add it to all my healthy baked snacks.

The vanilla flavor of mPower also adds decadence and richness to the flavor which I love.

By the way, you can make these in another flavor.

You don’t have to do lemon, but I loved the lemon in it, actually next time, I’m going to add more.

But you can make these with strawberries or chocolate chips or shredded coconut, or nuts, seeds or a combo.

Blueberry Lemon Protein Scones

Servings ~ 15 Scones


🍇3 cups almond flour

🍇1 tsp baking soda

🍇2 scoops mPower Protein Powder

🍇zest 1-2 lemons (if you like lemony -2)

🍇2 eggs

🍇1 tsp vanilla extract

🍇2 tbsp agave or honey

🍇Juice of 1 lemon

🍇1 cup of blueberries


-Preheat the oven to 350 degrees.

-In a bowl mix all the wet ingredients, including the zest, and then add in the dry ingredients and mix well.

-If it needs a little liquid, add a little more lemon juice.  

-Fold in the blueberries and make into little rolls and place on a parchment paper lined cookie sheet and bake for ~20 minutes.

Hope you enjoy these as much as I did.

They are delish with a cup of coffee!

I loved them so much, I am going to try them with strawberries and chocolate chips next time.
