Blueberry Crumble Cake – Gluten Free

I have to be honest with you…
The last few months have been hard on me and I’ve fallen out of habits that are good and always worked.
EXCUSES EXCUSES EXCUSES
It is what it is, but I want you to see that it happens to me too.
If you follow me on IG stories @michellemariefit, you have seen that I have been under construction for about 5 months.
We did my dream kitchen, floors, doors, baseboards and laundry room.
I’m so grateful and blessed, and I hate to complain but its been tough.
I’m so OCD and I don’t function well when I’m not organized and in routine.
So to say the least, its been tough in the eating department.
While I am proud of myself for not eating out for the most part and cooking for 4 months in my bathroom using the air fryer, toaster oven, crockpot and electric burner….. its been tough.
I did just what I had to to get by.
Plain, easy, simple and boring meals.
Enough for lunches and dinners and that’s it.

No snacks like I normally used to do and like I’m always preaching to you to do.
And what did this cause, you may ask?
Well, unfortunately it caused me to not eat as good as I normally would.
- Some days I would skip a snack all together and be famished for the next meal and then over eat.
- Some days I would grab a healthy store bought snack (which are never as good).
- Some days, I had a few bites of what my kids were having.
NOT GOOD 🙁
And while I still don’t have a stove or oven (it’s been 6 months and they said another 5-ugh), I decided I’m done with this bad habit of not prepping a healthy snack for myself.

Last week I made some chocolate chip cookies, but didn’t love them.
This week I made this blueberry lemon crumble cake that is just to die.
I had to share it with you.
Thing is, you won’t love all the things you make, but keep trying, keep cooking, keep baking until you find several new staples.
You want to find yummy ones that make you feel satisfied and you actually enjoy.
So, if like myself, you haven’t been on track with pre-making healthy snacks for yourself, its time to put your foot down and RE-COMMIT.

Ok, now on to the recipe.

Gluten Free Blueberry Crumble Cake
Ingredients
Ingredients:
🍇3 cups almond flour
🍇1/4 cup coconut flour (you can probably use oat flour)
🍇1/2 tsp baking soda
🍇2 tsp baking powder
🍇2 scoops mPower Protein Powder
🍇1/2 cup Monk Fruit Extract (you can use Stevia to taste or honey)
🍇1/4 cup coconut or brown sugar (you can use 3/4 of this if you don’t want to use the above)
🍇1/2 cup melted coconut oil
🍇3 eggs
🍇1/2 cup almond milk
🍇1tsp vanilla extract
🍇Zest of 1 lemon
🍇Blueberries to taste (I used about 1 1/2 cups)
Instructions
🍋Preheat the over to 325 degrees.
🍋In a bowl mix all the wet ingredients (milk, oil, eggs, vanilla).
🍋Mix in the sweetener, zest, baking soda and powder and protein powder and mix well.
🍋Mix in the almond and coconut flour and mix until well incorporated.
🍋Gently fold in the blueberries and pour into a 9×9 baking dish that has been lightly greased with coconut oil.
🍋Bake for ~ 45 minutes or until golden brown on top and cooked in the middle.
