The BEST Salmon Recipe- Apricot Glazed Salmon
Can you believe that I once hated salmon?
Yep, super crazy, but it’s true.
That is why I always tell people not to give up on teaching their kids how to eat.
The palate is something that changes and develops with time.
I once also hated oatmeal and now I love it!
So, if you don’t really like salmon, I encourage you to keep trying it and try it different ways and you may find that you actually like it one day.
My kids both like salmon so I make it often and all kinds of different ways.
I love making salmon because it cooks super fast so its a great week night meal.
I usually serve this with my Healthy Greens Fried Rice, its super yummy. I also make Roasted Asparagus to go with this meal. My kids both love asparagus and so do I. I can just eat it plain with my hands like its candy. LOL I know, not exactly candy, but its so good.
My family and I pretty much eat gluten-free so the carbs we stick to are………
Gluten-Free Carbs We Eat
- Brown or Jasmine Rice
- Sweet Potato
- Beans (black, kidney, cannelini, garbanzos, lentils)
- Brown Rice Couscous
- Brown Rice Pasta

None of us have celiac disease but I just don’t find gluten to be healthy or good for anybody.
I’m not crazy so we will go out and I will munch on a piece of regular bread and I do let my kids moderately eat cookies, etc. But for the most part we eat gluten-free.
When I took gluten out of my diet, I saw huge results.
I actually have ABS now and I never did before.
I also take gluten and and all the foods on THIS LIST from all my clients diet and they usually drop 10 lbs super fast from the debloat and inflammation that these 5 foods cause (gluten being included).

How yummy does this look?
I had it with just asparagus one night and I cut out the carbs because I had taken my kids out for donuts and guess who ended up eating a donut?
Apricot Glazed Salmon
- 1 lb salmon
- 1/4 cup apricot preserves/jam
- 1 tablespoon grainy mustard
- 1 tablespoon dijon mustard
- 1 tablespoon balsamic vinegar
- 1 tablespoon lime juice
- sprinkle of garlic powder
- s&p to taste
- Preheat the oven to 400 degrees.
- Meanwhile, sprinkle the salmon with s&p and garlic powder to taste and place in a baking dish.
- In a separate bowl mix the preserves, mustards, vinegar and lime juice.
- Mix well and pour over the salmon.
- Place in the oven and bake for ~10-15 minutes or until desired doneness.
Yep, me, but you know me, all about moderation. So I enjoyed a donut with my kids and then had a carb free dinner and then back at it the next day.

How often do you eat fish?
We do about once a week.
When I make my meal plan for the week I make sure to make a good variety of foods so I choose fish one night, the other turkey, maybe 2 chickens and every 2 weeks a lean steak. I like to keep it different so I don’t feel like Im dieting and so that I get different nutrients from different foods.
Do you make a meal plan every week?
Remember that they key to getting results and keeping them is to always be prepared.
Make a weekly meal plan, get your groceries done all in one day and prep some snacks and meals.
If you do this, your success rate with your weight loss will increase big time 🙂
