I have found that most people don’t really like eggplant unless it’s at an italian restaurant, deep fried and parmesan!
But I have actually gotten a ton of non-eggplant eaters to like eggplant. One of them being my sister. She can’t even believe sometimes that she likes it.
I play around with eggplant a lot and I’ve created a bunch of recipes with it. This one is quite different than most of them. My dad actually helped me with this one. He makes some amazing eggplant.
I want to ask you to give this and eggplant a try. There are also a few yummy eggplant recipes in My Eat To Be Fit Recipe Book. Actually, there is a whole section of VEGETABLES that are super yummy, supper healthy and super easy to make.
Remember, eating vegetables helps you burn tons of calories. They are very thermic, so eat up your veggies. If you try them different ways, you may find you really like them.
Eggplant is super high in antioxidants and also in fiber and its low in fiber. But make sure you eat the SKIN, as that is where the nutrients are!

Sautéed Eggplant You’ll Love

- 1 eggplant, diced
- 1/4 cup red onion, diced
- 1/2 red pepper, diced
- 1 tomato, diced
- 3 garlic cloves, minced
- 1/4 cup cilantro, chopped
- 1 sprig rosemary, chopped
- 1 tsp dried basil
- s&p to taste
- In a large saute pan, with a little stock, cook all the veggies, herbs and spices except the eggplant.
- Cook until softened.
- Place mixture in a food processor and puree.
- In the same sauté pan, with a little stock, cook the eggplant for a few minutes.
- Then add in the tomato-veggie mixture and cook for a few more minutes.
- Season with s&p.
I know, sounds a little weird but its delicious. Super tasty! I made this and ate the entire thing by myself…… Not in one serving LOL but in the course of a few days.
Try it, I think you will really like it! You can also throw this mixture into a turkey chili to add some veggies, flavor and spice!
Remember, get your veggies in…. its worth it!
