Seriously, this healthy chicken recipe is absolutely succulent.
I mean, mouth watering good.
And the best part of it is that my boys loved it. Boys meaning my husband and 4 year old son LOL. Its such a great feeling to feed your family healthy when they love it.
This chicken recipe is delicious and also super healthy. It has a crunchy and yummy crust that is made with shredded coconut which is a healthy fat so its good and good for you. And its ridiculously easy to make.
I love making super quick healthy week night meals because truthfully, though I pretty much cook everyday, I don’t have much time so I have to make sure its quick ones and this one is. I pair this with brown rice with edamame and roasted asparagus and its one delicious meal.
And if you want to step it up even more and super easy, get some fresh salsa. You can usually find these by the deli section in grocery stores. They even have mango salsas or some type of yummy salsa made with fresh ingredients. If you have this, you can add a tablespoon or 2 on top of the chicken and you may die its so good LOL.

Coconut Crusted Chicken
- 1 lb chicken cutlets
- s&p to taste
- 3-4 tbsp Dijon mustard
- 1 cup shredded coconut
- Preheat the oven to 350 degrees.
- Meanwhile, season the chicken on both sides with s&p and smother them with the mustard. Place the coconut on a shallow plate and dredge the chicken on both sides through the coconut as if you were “breading” them.
- Place on a lined baking sheet and bake for ~25 minutes, then broil for about a minute or until golden brown and crispy.
- Serve with your favorite fresh salsa on top.
