Healthy Gluten-Free Cookie Cake 

Ok, so I know you are thinking to yourself….  There is no way there is such a thing as a healthy cookie cake, but there is and its 100% healthy and 100% gluten-free.  Just look at this and tell me it doesn’t make your mouth water.

I found this recipe on Chocolate Covered Katie, I love her recipes and the fact that she loves chocolate as much as I do.  Isn’t it great that you can still enjoy things like this guilt-free.  What is better is that NOT feeling deprived will help you stick to your DIET so much better and in the end will give you better and longer lasting results.

You know, most people fail to lose weight or get results because they are eating the wrong foods.

What is crazy is that someone will look at this recipe and think to themselves, I can’t eat that, it has chocolate chips, thats not healthy, cake isn’t healthy….

But then behind closed doors they eat all kinds of crap and not in moderation.  When they do eat something bad, they can’t control themselves so they over eat because they normally try to deprive themselves so much and cut their calories so much.

I don’t like to feel deprived, you can’t be consistent that way so you never end up getting results.

By the way, before I give you the recipe, I just want to give you some tips that will help you with your weight loss and fitness goals even more than anything else.

Because it’s not just about calories………

I have found that a lot of people are “STUCK” with their weight loss because they are eating some of the wrong foods.

So I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.  The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.

Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

Ok, back to the recipe. 

This is a healthy recipe but it is mostly carbs even though there is protein powder in it and beans which are both loads of protein.  But its still great for an afternoon or morning snack.

By the way, CARBS ARE NOT THE ENEMY.

I eat carbs in every meal and I am in the best shape of my life, better than before kids and better than when I used to eat low to no carbs and do tons of cardio.  Yep, I used to do that, just like you are probably doing now.  But no more.  

 

I love recipes like this because I love chocolate and I don’t think I could ever be consistent with any meal plan if it didn’t include my favorite food….. Chocolate.

It’s important to include foods you love in your weekly meal plans so that you feel satisfied.  Because if you feel satisfied and you enjoy what you are eating, then you can stick to it.

I eat something different every single day.  I love doing that cuz then I don’t feel like I’m on a diet.  That is the worse feeling.

Having a meal plan and sticking to it will help you get way way way better results.

Its amazing the results people get when they actually have a plan.  I hear it all the time from the women who follow my BeFit Moms Meal Plan.  They normally lose 2-6 lbs a week and they do that eating more than they ever have and not feeling deprived and actually enjoying what they eat.

Now that is what I am talking about.

 

If you are not currently making yourself a meal plan for the week, I want to encourage you and challenge you to do so.  It will be life changing….

Not only will it save you a ton of time and money, but it will make huge changes in your body and your weight loss.  It will also help you tons with sanity. You will start seeing that eating healthy doesn’t have to be bland and boring and that you can actually enjoy eating healthy.

Crazy isn’t it!

I actually am having a piece right now as I write this.  It’s so important to eat every few hours to keep your metabolism going and keep you burning calories all day long.  But its hard to do this if you have to cook 6 meals a day.  But if you pre-make something like this earlier in the week, you can enjoy it as a morning or afternoon snack and not only keep your metabolism going but also STABILIZING BLOOD SUGAR in order to prevent CRAVINGS and BINGEING!  You really can’t go wrong with this.

Here is one thing to always keep in mind…..

Never let yourself get hungry, because that’s usually when you will fail and want to eat anything in sight.  

That is why I always tell you to keep healthy snacks and meals prepared with you at all times.  But I understand that sometimes you cant and in those instances a PROTEIN BAR would be the next best option.

Healthy & Gluten-Free Cookie Cake

Ingredients:

2 cans garbanzo beans, rinsed and drained

1 cup gluten-free oatmeal (I use Bob’s Red Mill)

1 scoop vanilla protein powder (I use PROGRADE)

1/2 cup unsweetened applesauce + more if needed to get desired consistency

3 tbsp coconut oil, melted

2 tsp vanilla extract

1/2 tsp baking soda

2 tsp baking powder

2 tbsp agave nectar or Stevia to taste

3-4 tbsp gluten-free, dairy-free chocolate chips (I use DREAM)

Instructions:

Preheat the oven to 350 degrees.  Meanwhile in a food processor, blend all the ingredients except chocolate chips.  Add a little more applesauce if you need to smooth out the batter a little more so that it is a little softer than cookie dough.  Fold in the chocolate chips and pour into a lightly coconut oil greased 9 or 10-inch springform pan and bake for ~25-30 minutes or until brown on top and goey in the middle.

Ok, if you don’t try this one, you are absolutely nuts.  This is crazy good!  And so darn good with a cup of coffee or tea.  I hope you enjoy it and I hope you enjoy browsing around My Pinterest Boards and  My Facebook Page .
