Healthy Chinese Rice

Isn’t it so hard to get back into the groove after the Holidays?

For me it was.

I took a little vacation from everything…… work, social media, emails, cooking, grocery shopping, planning, etc.

So last week was a pretty BUSY and hectic week, but I made it and right back in the groove.

I still have family here which is great.  I have 3 of my little cousins in town and I am having a blast with them, especially the girl LOL.

Isabella, she is 10 and just precious and she is such a girly girl.  So of course she wanted to cook with me while the boys played outside in the bounce house.

She was surprised at how fast we made dinner.  It was a blast cooking with her and she helped me so much.

We whipped up this delicious “Chinese Rice”, a healthy version.

By the way, try this with My Coconut Chicken, it would be so good you could entertain with it without the excess calories.  You can get that recipe on My Pinterest Board, so make sure you are “Following” them.  Because all of my healthy recipes, snacks, shakes and workouts are on there.

It probably took us a whole 15 minutes to prepare.

And while we made it, I roasted some shrimp in the over for 6 minutes….. and……. VOILA…… Dinner was served!

Doesn’t it look divine….. and literally 15 minutes.

Ingredients
  1. 1 1/2 cups brown or jasmine rice, cooked
  2. 1 package of asparagus, roasted and chopped
  3. 1 cup edamame, thawed and shelled
  4. 1/2 cup shredded carrots, chopped
  5. 1 tbsp black sesame seeds
  6. 1/2 cup roasted red peppers, chopped
  7. 2 eggs, scrambled
  8. 2 tbsp hoisin sauce
  9. 2 tsp each of toasted sesame oil and coconut amino’s
Instructions
  1. In a large bowl, mix all the veggies and fold in the cooked rice (I used left over rice).
  2. In a small bowl, mix the hoisin, sesame oil and amino’s.
  3. Then fold in the eggs and drizzle the sauce and fold in well.
  4. Sprinkle sesame seeds and serve.

You have to try this, and you can eat it with a salad as a Meatless or Vegetarian Meal or you can add chicken, turkey, steak or shrimp.  I ate it with shrimp and it was amazing.

Actually, what would be amazing with this is My Lime Shrimp recipe from My Eat To Be Fit Healthy Recipes Book.  Its just a few ingredients that you probably already have on hand and its easy to make.

By the way, I used whatever left over veggies I had in my fridge and left over rice.  So feel free to use whatever veggies you have on hand or left over from other meals.  You can even use quinoa or brown rice couscous for this.

This was such an easy meal to make because I used all left overs and the peppers that I just had to chop.  Its a great meal to make later on in the week when you have left overs and need to use them all up.  I really hope you try this one because its really good and simple to make and very versatile.
