I am a creature of HABIT.
It keeps me on track, it keeps me organized and it keeps me from procrastination.
So I pretty much do everything in my life on a “Recurring” basis.
For example: I make my healthy meal plan on Fridays, grocery shop Sundays, Bake Healthy Snacks of Thursdays, etc.
I know, I bit psycho, but hey, it keeps me on top of things. And as a busy mom, wife, home maker, CEO and personal trainer, if I don’t do it this way, I would never get anything done.
So, if you too are BUSY, my advice to you, is make a plan, schedule it and do it the same on a weekly basis. You will see that you will get so much more done.
Anyhow, Thursdays is the day I make my healthy snacks to have for the weekend and week. I taste test about 2-3 recipes. By the way, all the good ones, I post on My Pinterest Boards. I have one whole board dedicated to Healthy Snacks. And most of them are Gluten-Free Snacks.

Last week, I tried these Gingerbread Scones. Holy Moly they are unbelievable and I got them right the first time. I usually have to make recipes a few times before I get them right.
I am loving using Almond Meal for so many recipes. I love that they can be so low in carbs and high in healthy fats which not only is good for you but also makes you feel full longer.
I know a lot of you make my recipes all the time, because I get your emails, Facebook messages, etc. But for those of you who make them and never post, would you please do so for me. I love to hear from you guys, what you think of the recipes, if you changed them, anything. So if you make any of them, even post a picture on My Facebook Page or just let me know what you thought.
This recipe I adapted from www.alldayidreamaboutfood.
GingerBread Protein Scones (Gluten-Free)

- 2 cups Almond Meal (I use Red Bob’s Mill)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp pumpkin pie spice
- 6 Stevia packets
- 1 scoop vanilla protein powder (I use BB3 Formula 1)
- 1 egg, beaten
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 2 tbsp almond milk
- Preheat the oven to 350 degrees.
- Meanwhile, in a large bowl, mix the egg, melted oil, extract and milk.
- Mix in the rest of the ingredients and mix well.
- Form into little rectangles or whatever shape you want and line them up in a parchment paper lined baking sheet and bake for about20 minutes or until golden brown on top and cooked through in the middle.
I really think you are going to love these. They are so easy to make and they really are soooooo yummy!
Pair them up with a good cup of coffee or tea and you are in for one enjoyable healthy snack.
I know gingerbread seems like a Christmas thing but they are so good that you will want to enjoy them all year long. And for all my chocolate lovers, i was thinking that you can also throw in about 2 -3 tablespoons of chocolate chips and make them GingerBread Chip Scones. Holy Yumminess.
