Fresh & Easy Shrimp Ceviche

Do you ever have those days when you just can’t stomach another piece of chicken?

I have those days often! 

So I was so happy when I whipped up this yummy SHRIMP CEVICHE.

I love cooking and eating shrimp.  Its such a good change from the same old chicken and turkey.  Sometimes that gets very boring.  I also love that shrimp cooks in like 5 minutes, so its great for a quickie weeknight meal.

Weeknights are tough aren’t they.

I mean to get a yummy quick and healthy meal that the whole family loves…..  now that is tough.

I also am a huge fan of loving what I eat.

I hate eating foods I don’t enjoy just cuz “they are healthy”.  I find that if you don’t enjoy what you eat then you can’t be consistent.  And lack of consistency is why people fail with their attempts at weight loss.

So I choose to make different meals all the time, to take the extra few minutes to really season and jazz up my meals and also try different things that my kids will like too.

That is why I created my BeFit Meal Plan.  It is 6 months worth of  weekly meal plans and over 300 healthy recipes so that you never get tired of eating healthy and actually look forward to it.  I follow it myself on a daily basis and its crazy but my kids love love love mosts of the meals and hubby does too which is a major plus.

It feels so good knowing my family is eating healthy and its also serving me with my fitness goals.

This recipe is so yum and the best part is I made it in 5 minutes.  Seriously!

But before I give you the recipe, since I know you probably have a few pounds you want to lose, I want to give you some critical tips for fat loss because no matter what recipe you make or how much exercise you do, if you don’t take these 5 foods out of your diet, you CAN NOT BURN FAT EFFECTIVELY.

So I have to make sure you are not eating one or more of foods on this list.  Because if you are, it can be completely SABOTAGING your results.  Yes, it can totally be true that you can be working your butt off at the gym 6 days a week, eating super healthy (as you think), but if you are eating one or more of these foods, you will NOT BE ABLE TO LOSE WEIGHT.  The reason is because these foods though some may think are healthy or not so bad, are actually very inflammatory.

Inflammation in the digestive track makes it incredibly hard if not impossible to burn fat. So in order to be able to burn fat so you can lose weight effectively, its crucial that you take these foods out of your diet.

How do you fix it?

Be CONSISTENT with your PLAN and be SYSTEMIC & STRATEGIC about it.   If you do, you will be finally able to say “It’s a LIFESTYLE”.  Because when it really is a “lifestyle”, your body and life reflect it.

Fresh and Easy Shrimp Ceviche

Ingredients
  1. 1 lb shrimp, peeled and deveined
  2. 1/2 onion, diced
  3. 1 tomato, diced
  4. 1 English cucumber, diced
  5. 1/2 cup cilantro, chopped
  6. 2 limes, juiced
  7. 1 container of fresh salsa (I used mango salsa)
Instructions
  1. Preheat the oven to 350 degrees.
  2. Sprinkle the shrimp with s&p and bake for ~6 minutes or until opaque.
  3. Set aside and let cool.
  4. Meanwhile, in a large bowl, combine the rest of the ingredients.
  5. When the shrimp cools, fold them in to the veggie mixture.

I’m telling you, it takes about 10 minutes total to make this dish and its absolutely delicious.  So refreshing and so yummy and so healthy!
