Crunchy Stuffed Cucumber Boats

My clients are always asking me for ideas on healthy snacks.

This one was inspired by a recipe on Pinterest.   I love to get ideas from there and then just FITNESSIFY them.  That is make them healthy but FIT healthy.

I love this recipe for two reasons.  Its delicious and easy to make.  Oh and also, crunchy!  Love that!

The hardest part of this recipe is taking out the flesh from the cucumbers, but it still only takes about one minute.  You can literally make this recipe in about 5 minutes.  Its a great healthy and fresh snack to keep in the fridge.  Actually, it can also be a side dish.

This recipe reminds me of My Stuffed Zucchini Boats from My Eat To Be Fit Healthy Recipes Book.  Now that is one delicious dish.  And you can also make it a complete meal by adding ground turkey to the stuffing. Ingredients
  1. 1 English cucumber, cut in half and take flesh out with mellon baller
  2. 1 cup cottage cheese
  3. 1 scallion, chopped
  4. 2 tbsp parsley, chopped
  5. flesh of cucumber, chopped
Instructions
  1. Mix all ingredients in a bowl and spoon onto both sides of cucumber.
  2. Keep refrigerated.
